now what are the rules of engagement? Political correctness, as well
as stepping on someones toes, all come to mind, so I have no idea,

Not sure about stepping on toes part but in general I would suggest just being yourself. I wouldn't worry about being intimidating by being forward.If he has an interest it most likely will respond.

Mt Rushmore and the president's history or another historical topic, Current Events (not politics), The economic situation and how that has been a benifit you. ie. Because of the declining dollar, I am more able to afford to go and vacation in the states.
Talk about how the Chinese foreign investment has influenced your local economy. (Are you in Australia? I hear they have been trhing to buy up many raw material mines.) (I am not big on sports so I can't comment there).
